Growing up my mother would make strawberry shortcake for desert in the hot summer months. I used to love it when she would make it because she always had the right amount of strawberries, short cake and ice cream. That usually entailed drowning my cake in ice cream and berries. All these many years later, I make this same desert for my boys. It’s still my favorite desert. I craved it with all 4 of my pregnancies. It has four simple ingredients:
1. Strawberries (duh)
2. Graduated sugar
3. Short bread
4. Vanilla ice cream.
Now I’ve seen strawberry shortcake (“SSC” in my house) usually made with whipped cream and not ice cream. But, I find that the cake isn’t so dry with the ice cream.
The pictures pretty much give you the directions.
- Cut the strawberries
- put sugar with the strawberries
- mash the berries
- serve.
Add as much sugar you feel is necessary. When preparing your desert add as much ice cream and berries as you feel necessary.
If you are in the “dry” SSC camp, then don’t add too much ice cream or berries. I, on the other hand, drown my cake with ice cream and berries to make a mush (I know, it’s my thing, I’ve done since I was a kid and haven’t grown out of it).
